100% Pinot Gris from the Hemel-en-Aarde Valley, specifically from the De Bos Vineyards against the Babylonstoren Mountains, overlooking Walker Bay. The grapes were hand-harvested then pressed at the family cellar in Wellington. The juice spent 2 months on the lees bringing generosity to the wine that balances with the natural acidity of the cool climate fruit. After fermentation the wine spent a further 6 months in stainless steel resulting in a wine with crisp acidity and concentrated stone fruit flavours.
