Hilton Vineyards The Dalmatian Syrah 2015

The wine is called The Dalmatian on account of the minimal portions of the Viognier cultivar used in the blend. The Viognier grape is reported as having its origins from the Dalmatian coast. (Croatia) The wine was inoculated with Rhone yeast and fermented for 19 days.
After fermentation the wine was matured for 19 months in 25% new small French oak barrels.
In the glass the wine is dark ruby in colour with a subtle nose of dark cherries and a whiff of violets. The Syrah is well-rounded and finely balanced with subtle French oak integration.
Smooth tannin structure with a powerfully long finish.
*Strongly recommend decanting into a “ships decanter” 2 hours before serving, if drinking now.
