An exquisite Viognier made in honour of the Roman Emperor Probus; who in the year 281AD was responsible for taking the cultivar on the perilous journey from Dalmatia up to the Rhone, where it eventually found its spiritual home of today. Sparing no expense, an extraordinary winemaking process was undertaken, whereby the grapes were 100% de-stemmed, crushed and then given 2 hours of skin contact with dry ice – ensuring an intensely aromatic and deliciously round wine, that delivers an incredibly soft lingering finish. This vintage was a much better harvest, with what Richard describes as the best fruit to date, resulting in a softer wine than previous years. Only the best grapes were selected, there was better oak integration, and this is why the reserve stands out as the ‘best of vintage’. Extremely limited, only 546 bottles! Aged in small French oak 2nd fill barrels for 8 months. Expected optimum drinking 2015-2016. Cellaring potential through 2025

We love:  This is a super-healthy dish that’s a real treat for either lunch or dinner. You can easily cut the carbs, too, by substituting the potatoes for sweet-potatoes. Plus, you just don’t get a better match than the winemakers own recipe! The use of en papillote to cook the potatoes and mushrooms is also fun, easy and bound to impress. Alternative pairing: Whilst designed to work with the stunning ‘Emperor Probus Reserve’ this dish will pair nicely with most white wines, especially viogniers.
