This blend of Pinot Noir and Chardonnay has resulted in a beautiful pale pink creation.
The wine is elegant and fragrant, with light fine bubbles and refreshing acidity.
Both the Pinot Noir and Chardonnay were harvested by hand. The Pinot grapes were fermented dry in stainless steel tanks, whilst the Chardonnay grapes were fermented under pressured stainless steel tanks. This process is known as Method Charmat.
The final CapeSecco blend was left on its lees for 12 weeks to ensure good integration of the bubbles.
