Radford Dale – Freedom Pinot Noir 2016
Farm: Radford Dale
Elegant Pinot Noir which has been the toast of a Royal Wedding in vintages past. Complex, serious with an incredible vivacity.
A burgundian-style Pinot Noir through and through, Produced by a winemaker that acquired his skills in the spiritual home of Pinot Noir in France. A well crafted, well-rounded wine, expressing a full mouth feel and a lingering mineral-driven finish. At a blind tasting at Harrods in the UK, this wine was mistaken for a Burgundy. 4 ½ Platter Stars.

Chef Craig Cormack developed this recipe to work seamlessly with the Woodward Ridge Chardonnay-Pinot Noir. Craig says “The fresh acidity of this wine works well with the oiliness of the fish, and the added twist of Pinot Noir in the blend compliments the earthiness of the peas extremely well”. We love: Looks and tastes exotic, but it’s deceptively simple. The pairing itself is a match made in heaven.
