All varietals were hand-harvested at optimal ripeness and fermented for 5 to 7 days.
Thereafter the wine was gently pressed and the free run juice was consolidated.
The wine was gravity fed to 50% new French oak barrels for 12 months of maturation. (2nd and 3rd fill was used for the remaining)
After maturation all varietals were blended together and racked back into barrel for a further 6 months of integration.
Classic upfront cassis and dark plum are apparent on the palate with elegant peppery spice on the finish.
Drink on its own or pair with roast lamb and dark chocolate.
The final blend was lightly filtered prior to bottling.
Drinking beautifully now, but can cellar for a further 20 years.
58% Cabernet Franc, 17% Merlot, 17% Cabernet Sauvignon, 8% Petit Verdot
