Saltare Wines

Derived from the Latin word meaning “to dance”, Saltare embodies movement, rhythm, and the delicate balance found in great wines.Led by winemaker Carla Pauw, Saltare embraces a minimal intervention philosophy rooted in biodynamic principles. Every step of the winemaking process is approached with intention and care.  Juice is moved gently by gravity, not pumps, to preserve purity and texture.  Wooden barrels are used not for overt oak flavour, but as a subtle tool for balance and integration, allowing the terroir and varietal character to shine through.

The result is wine that is elegant, vibrant, and reflective of both place and philosophy—a true expression of craftsmanship and natural harmony.
