Description
This blend of Pinot Noir and Chardonnay has resulted in a beautiful pale pink creation. Both the Pinot Noir and Chardonnay were harvested by hand and whole bunch pressed to allow a more delicate extraction. The Pinot Noir grapes were fermented dry in stainless steel tanks. Second fermentation took place under pressured stainless steel tanks. This process is known as Method Charmat. The final CapeSecco blend was left on the lees for 16 weeks to ensure fruit complexity and good integration of bubbles. Elegant and fragrant notes of strawberry and watermelon are apparent on the nose. The wine is wonderfully refreshing with a stream of fine, delicate bubbles. Ideal as an aperitif, but pairs well with smoked salmon, sushi and fresh salads.
