Description
Harvested from two separate vineyards located in Northern Stellenbosch and Voor Paardeberg. The grapes were destemmed, (not crushed) and transferred to stainless steel tanks and dropped in using gravity. The priority during maceration was to focus on developing elegance and fruitiness and avoid bitterness and harsh tannins for which Pinotage is notorious. Spontaneous, wild fermentation occurred inside the unbroken skins of the berries. This coaxes out the gentler, more textural nature of Pinotage.
This wine displays a refreshing yet juicy palate with cherry fruit characteristics and savoury hints of ground coffee. It has a lithe texture with integrated, supple tannins and attractive spice on the finish.
