Description
Crafted from handpicked Chardonnay grapes grown in 21-year-old vineyards, this MCC begins with meticulous hand sorting and whole bunch pressing. The result is a clean, neutral base wine that undergoes fermentation in tank and is kept cold to preserve its purity. During secondary fermentation, rich biscuity characters begin to develop. 36 months on the lees, the wine reveals a beautifully integrated palate: vibrant citrus, zesty lime, and crisp green apple layered with subtle minerality and a creamy, lees-derived texture.
The mousse is fine and elegant, carrying through to a dry, broad palate and a lingering biscuit-driven finish. While already drinking beautifully, this MCC has the structure and finesse to reward cellaring for up to 10 years from vintage.
